Ingredients:
- 1/4 cup olive oil
- 3 tbsp minced garlic
- 1/3 cup dry white wine
- 1 tbsp grated lemon zest
- 2 tbsp lemon juice
- 1 1/2 tsp dried oregano
- 1 tsp minced thyme leaves
- salt & pepper
- chicken breasts
- 2 lemons
Directions:
- Warm olive oil in sauce pan over medium low heat
- Add garlic and cook for 1 minute
- Off heat, add wine, lemon zest, lemon juice, oregano, thyme and 1 tsp salt
- Pour mixture into baking dish
- Rinse chicken and pat dry
- Brush with olive oil and sprinkle with salt & pepper
- Place chicken (skin side up) in the baking dish
- Place lemon wedges around chicken
- Bake at 400 degrees for 30-40 minutes until chicken is done and skin is lightly brown
I couldn't find chicken breasts with the skin on, so I used boneless, skinless chicken breast. All in all, this turned out great. The chicken was moist and tender and the recipe was very easy (and included a lot of garlic which I LOVE).
