Lemon Chicken

This has been an incredibly busy, emotional week.  So, there wasn't much time to have relaxed home cooked meals.  However, I had Monday off and decided to try something new for dinner.  I searched through my cookbooks for something quick and tasty.  Most of the recipes I found required marinating or brining the chicken (we were in the mood for chicken).  So, once again I went to my "go to gal" Ina.  Off to Trader Joe's E and I went to purchase what we needed to make Barefoot Contessa's Lemon Chicken.  




Ingredients:
  • 1/4 cup olive oil
  • 3 tbsp minced garlic
  • 1/3 cup dry white wine
  • 1 tbsp grated lemon zest
  • 2 tbsp lemon juice
  • 1 1/2 tsp dried oregano
  • 1 tsp minced thyme leaves
  • salt & pepper
  • chicken breasts
  • 2 lemons


Directions:

  • Warm olive oil in sauce pan over medium low heat
  • Add garlic and cook for 1 minute  


  • Off heat, add wine, lemon zest, lemon juice, oregano, thyme and 1 tsp salt
  • Pour mixture into baking dish
  • Rinse chicken and pat dry
  • Brush with olive oil and sprinkle with salt & pepper
  • Place chicken (skin side up) in the baking dish
  • Place lemon wedges around chicken



  • Bake at 400 degrees for 30-40 minutes until chicken is done and skin is lightly brown


I couldn't find chicken breasts with the skin on, so I used boneless, skinless chicken breast.  All in all, this turned out great.  The chicken was moist and tender and the recipe was very easy (and included a lot of garlic which I LOVE).
